My mom always made my brother and I Sopapillas growing up. Ok Sopapillas is a fancy name for a Deep-Fried Flour Tortilla, Sprinkled with Sugar and Cinnamon. Around Halloween she would carve the tortilla to look like a pumpkin which was really cool.
Nevertheless, now with gluten free tortillas available at the grocery store I no longer need to make these with Corn Tortillas and can actually use a Gluten Free Flour Tortilla. YAY!
It is just so easy and quick — Just fry up the tortilla then sprinkle with a Cinnamon-Sugar mixture and then top with a dollop of whipping cream drizzled with honey!
Today the kids didn’t have school and everyone wanted dippy eggs with waffles and of course I was low on syrup. Which isn’t a big deal since I can whip up a batch in 10 minutes or less. But I wanted to try something different and not use corn syrup. I decided to substitute the corn syrup with honey and go from there.
The honey has a strong flavor so I added more maple flavoring to compensate. Needless to say — the syrup came out very tasty!
My family loves honey butter, what can I say?
Honey butter is one of those sweet and salty delights that pairs very well with cornbread, bagels or even toast.
Tonight was a stew kind of night, and what goes well with stew is cornbread. And of course I had to make honey butter to go with the cornbread as stated above. 😀
