My mom’s birthday was coming up and as always I make her, her birthday cake. This year I went the easy route and used boxed cake mix and a boxed brownie mix.
The brownie layers perfectly complimented the yellow cake. The cake truly turned out pretty and very tasty!
I am sharing this semi-homemade version of the recipe here. That is one box of gluten free yellow cake and one box of gluten free brownie mix. You can even use canned frosting if you didn’t even want to make that. Regardless, you can most definitely make this from scratch! My parents were coming to visit last week so my family could celebrate my Mother’s birthday on Friday. I decided that I was going to try making her a 4-layer Butterbeer Cake. Of course I don’t think she has ever seen Harry Potter, but I didn’t care.. I so wanted to make this moist cream soda and butterscotch infused cake regardless!
While this isn’t our first time at Disneyland nor is it our first time there eating Gluten Free, I am quite excited to go and be there and see what they have going on for the 60th Anniversary!
My Husband, Kids and I have saved up our birthday and Christmas money to make this trip happen. And for the last 3 trips (over the last 6 years), my parents have joined us at the Happiest Place on Earth!
SO, it is official… WE ARE GOING TO DISNEYLAND in 30 days! Total countdown mode now!!!!!
My son Aden is very excited cause we’ll be in the Happiest Place on Earth for his birthday… Yeah lucky kiddo! 🤗💓
I am thinking I will have to celebrate my son Arik’s birthday as well since his Birthday is only 5 days prior to Aden’s and well we are leaving for our trip 3 days after his birthday. SOOOO, I will have to see what I can do to make it special for Arik as well.
We didn’t plan ever to go on one of our kids birthdays… it just happens to fall on the week Disneyland is deemed to have the least crowds of the year. So we picked that week to avoid waiting in massive lines.
Now mind you the last time we went to Disneyland, we went on Christmas 2013 – THE BUSIEST DAY OF THE YEAR. And will NEVER do that again. Nevertheless, we used Touring Plans (touringplans.com) and the app mapped out our best wait times and stragedies for which rides at what times for us including meal breaks and fastpasses. So the most we waited in lines on the Busiest day was 20 minutes.
Even though we are heading there on a least busy day, I am still gonna use Touring Plans App again cause it was a snap to use and I rather get through the park with ease, especially with three kiddos!
I love everything Disney and wish I could live at the Happiest Place on Earth. I mean I wouldn’t starve there especially since they are up on their Gluten Free awareness and you can go to City Hall and get a listing of where to eat Gluten Free. AND we already have a Character dining reservation at PCH Grill for the night of my son’s birthday and they are making (for an additional fee) a gluten free birthday cake to bring him out after dinner. I can’t wait to see how they present his cake!!! I am just beside myself!
Anyhow, T-minus 30 days.
I have been planning a birthday party for my two sons. Their birthdays are 5 days apart so every year since the youngest has been one, the boys have been having a combo-birthday together. This year they were celebrating 6 years old and 4 years old birthdays together. I know eventually they will want separate birthdays but for now I like combining the two together.
Unfortunately, we had a storm hit us on Friday – the night before the party. This storm was worse than the one that hit us in December. Weird thing is — our area has never experienced such destruction like this ever from windstorms or rain prior to the December Windstorm.
This time — our Trampoline that takes several adults to lift to move was flung by the 90 mph winds like it was a feather. Our neighbors tree was uprooted and toppled over nearly missing our fence. Our tent trailer’s roof popped open and my father and I were out in the gust for nearly 30 minutes trying to get the roof down and latched. And then another 15+ minutes trying to gather up the chickens and put them in the coop and praying the coop wouldn’t blow over. Then while I was gathering the chickens my father yells, “The Shed!!” I turn around and our shed that the ATV was in blew over and teetered upside down and almost over the fence into our other neighbors yard. And of course, now I have been suffering with massive sinus congestion and a stuffed up nose since being in the wind. And I was just starting to feel better after being sick for 6 weeks with bronchitis.
My kids have been sick all month for one reason or another. My daughter came up positive for Strep Throat and the next day my youngest was in the doctors with an ear infection. Well my daughters medication had ended on Wednesday of last week and by Friday she was running a high fever and sounded like a barking seal. My husband and I were leaving for Las Vegas on Saturday morning but had to postpone a few hours so I could take my daughter to Urgent Care.
The Doctor told me she still had strep throat which would require her to be on a stronger dose of antibiotics this time around. AND that she also had croup and would have to have an oral steroid.
So my husband and I finally take off to Las Vegas while the kids are being taken care of by my parents. Las Vegas is a 7+ hour drive from where we live — 400+ mile trek. But we have a Prius so the gas alone is way cheaper than any flight we could had gotten.
We were there basically for 1 day literally and that was to see Jeff Dunham perform at Planet Hollywood on Sunday afternoon. However, by Sunday night I wasn’t feeling too well… I was having stomach issues. For our car ride home Monday — I was in full blown chills.
Tuesday my Father took me to Urgent Care since my doctor’s office was booked. I was told I had Strep Throat and a mild case of Bronchitis. Mild Case my ass… my ribs hurt so bad from coughing it is painful. So they put me on a z-pack I guess is what they call it.
By Wednesday the 17th my son’s are presenting symptoms now. So I had my parents take them to the doctors … and yep strep throat. My youngest still has a bad fever today.
And my daughter had ran a fever for at least 5 days after being on the new medication. So she missed this entire week from school.
And then there is me. I have been so sick that I was in bed for 5 days straight. This is literally the first time I was able to sit up and turn on my computer and type something out for my Blog.
I can’t remember the last time I was so sick that I was stuck in bed for 5 days if ever. My throat still hurts. My cough is awful and I am all congested — not fun at all.
I hope that we are all well enough for christmas next week. And knock on wood that my husband doesn’t fall ill to this nasty germ bug that is hitting my home hard.
Yes, my daughter wanted a “Frozen” Birthday like every other girl this year. I was informed of this decision about 6 months ago and have been working on this “project” for a couple of months now.
I held the party outside, but of course I stressed over it for a couple of weeks because I wasn’t sure if it was going to rain or snow especially since I had no idea how I would have 30+ kids and a bunch of adults in my little house if it did rain/snow.
But the weather held up nicely at 55º up until the last hour of our party — and then it started turning cold and breezy — a literal “Frozen” Party, LOL.
I used snowflake table clothes including and couple of Arendelle themed plastic table clothes for a couple of my little tables. I also decorated with Frozen themed helium balloons on the tables.
Today is my daughter’s 8th birthday and I make her cake practically every year. And this year wasn’t any different. However, I bought a cake box at walmart so I could box it so we can take it over to CV Steak at the Carson Valley Inn for Dinner tonight! I think I did a pretty good job (for someone that doesn’t frost cakes that often) — except for writing her name not so good at that. I need to work on that one!
