I love breakfast sandwiches. Ok I love sandwiches in general. But, the combination of flavors and textures in this sandwich are awesome and jazz up a boring BLT any day.
Normally I love this with a fried egg but decided to make a less messy version and use a scrambled egg instead. Regardless of how you like your egg — this is the breakfast sandwich for you.
This is by far the easiest meal and the most tastiest!
I love avocados, and have never stuffed them before. I really consider avocados to be one of my favorite foods – they’re delicious and not to mention good for you. I am trying hard to cut back on my carbs, probably not winning at the attempts however, definitely trying.
I wanted to make something refreshing, healthy and low-carb. So after making the Turkey Salad, I stuffed the turkey mixture into a very ripe avocado half. Lets just say lunch was gone within minutes because it was just too good to savor!
If you guessed by now, I love avocado. I grew up in California down from my grandparent’s home that had two HUGE avocado trees. I never knew what an avocado cost until I moved to Nevada and boy what a culture shock that was.
Nevertheless, I still love avocados and will purchase them from Costco where they are a little nicer on the wallet.
With Cinco De Mayo upon us I decided to make guacamole for the kids and I.
Guacamole is a great avocado dip for chips or even as a side for enchiladas, taco salad or even on Nachos.
I can’t believe May is here already. The months are flying by faster and faster each year it seems. Nevertheless, I finally went grocery shopping and ended up picking up a package of Plain Udi’s Bagels. This morning the kids had a 1/2 of bagel slathered in cream cheese and topped with raspberry jam. I am more of a everything kinda girl with more taste buds for textures and flavors that I decided to raid the fridge to see what I could top my bagel with.
I found leftover bacon and avocado and a package of swiss cheese and knew exactly how I was going to top my bagel!
If you want to cut back on your carbs or just get a little more veggies in your diet go for a lettuce wrap instead of a sandwich.
Today just felt like a bacon kinda day. And since I love avocados — the two really compliment each other well. However, I wanted something a tad lighter than a sandwich so I reached for the Romaine lettuce in the fridge.
Lettuce wraps to me are quite messy be it as a sandwich, appetizer or a burger, but are extremely tasty nevertheless.
Years ago when I lived in Tahoe I worked across the street from a bagel shop and would frequent there quite often. One of my favorites from the shop was an everything bagel smothered with garlic cream cheese then topped with slices of tomato and avocado covered with melted havarti cheese and sprinkled with Garlic Pepper. This was my go to breakfast in the morning.
However, it was pricy eating out everyday. SOOOOOOO, I decided I could make it myself — and boy how easy it was.
Now fast forward 10+ years and throw in being gluten intolerant… and you have gluten free bread instead of an everything bagel. I tend to use what I have on hand at home to make my broiled breakfast than go out of my way to get every ingredient.
I always seem to have provolone cheese on hand and there was leftover diced tomatoes from tacos the other night in the refrigerator so that is what I used but by all means go ahead and use freshly sliced tomatoes or whatever cheese you prefer.
