A couple of weeks ago I cut up a raw turkey and used one of the turkey breasts to make Gluten Free Turkey nuggets served with my cranberry dipping sauce!
I dredged the nuggets through egg and a gluten free bread crumbs mixed with smashed Ruffles potato chips as my breading. Yep, it was a tasty concoction!!
Homemade Gluten Free Turkey Nuggets
- 1 cup crushed Ruffles Potato Chips
- 2-½ cups gluten free Italian bread crumbs
- 2-3 lb turkey breast, skinless & boneless
- 5 eggs
- extra virgin olive oil
In a large frying pan heat a ¼ inch of oil til nice and hot, yet not smoking.
Next, place Chips into a food processor to crush.
In a large bowl combine bread crumbs and crushed chips and mix thoroughly together.
In another large bowl crack the eggs and whisk until well combined.
Take your turkey breast and cut into nice large cubes.
Next dreadge turkey cubes in egg and then bread crumb mixture.
Then place nuggets in frying pan. Cook 2-3 minutes or until browned, then flip and cook other side until browned and cooked through. Place on a paper towel lined plate to absorb excess oil.
Repeat, until all nuggets are cooked.
