Gluten Free Shrimp Scampi with a hint of Curry

I absolutely love shrimp and am always experimenting for dinner time. I also like curry so instead of doing a a Thai Shrimp Curry I decided to give Shrimp Scampi a kick and so glad I did!!


Gluten Free Shrimp Scampi with a hint of Curry

Serves 6


  • 2 lb shrimp, peeled and deveined
  • 2 tablespoon arrowroot starch
  • 1/2-3/4 teaspoon mild curry powder (to taste)
  • 1 cup (2 sticks) butter
  • 3 Tablespoons olive oil
  • 1/4 cup minced garlic
  • 1/4 cup white wine
  • 1 teaspoon sugar
  • 2 teaspoons fish sauce
  • 1 teaspoon lemon juice
  • 1/4 teaspoon white pepper
  • 1 pound string beans, cooked
  • 6 cups cooked rice


Clean, peel and devein shrimp.

Mix arrowroot and curry together in a large bowl. Add the shrimp and toss a few times to coat in the arrowroot mixture.

Heat on medium heat in a sauté pan or wok and then add the butter.

When the butter melts, add the olive oil.

Add garlic, saute for a few minutes.

Next add the shrimp.

Saute the shrimp a minute or two then add the white wine, sugar, and fish sauce.

Continue to sauté until the shrimp is cooked through but not over cooked.

Finally add lemon juice, white pepper and cooked string beans.

Combine well and serve over rice.
