I am one of those moms that want my family to have veggies with every dinner regardless of what we are eating. The other night the kids wanted hamburgers for dinner. Most times the only veggie they would get with a hamburger would be a piece of lettuce, however, I wanted them to eat more than that, so I pulled out the bag of frozen veggies. I chopped the veggies up in the food processor then added them to the hamburger meat. Definitely not your typical burger, but it was quite tasty, in my opinion, and the kids ate every bite up, too. AND it didn’t hurt that I made tater tots as our side so the family was all round happy!
Veggie Beef Cheeseburger
Ingredients (Makes eight 1/4 pound patties):
- 2.5 lbs ground beef (80/20 is good and flavorful)
- 2 tablespoons seasoned salt
- 1 small onion, diced
- 4 cups frozen veggies, diced
- 1 tablespoon olive oil
- 8 gluten free hamburger buns (I like to use glutino english muffins), toasted
- 8 slices Swiss Cheese
Place first 4 ingredients into a large mixing bowl. Use hands to mix everything together well.
Split the beef into quarter-pound patties and flatten between the palms of your hands or use a hamburger maker like I did.
Cook for 5 minutes on both sides or until your desired liking. Before removing from pan add cheese and let melt.
Remove patties and top with a toasted gluten free bun. Serve with condiments of your liking.
