Gluten Free Home-Style Turkey Meatloaf

My daughter is a HUGE fan of Meatloaf. I get heartburn from cooked tomatoes that includes ketchup and barbeque sauce. Basically anything that contains cooked tomatoes is not my friend. However, I will make meatloaf and bare the pain because my daughter loves my meatloaf. That has to be love, right?

Gluten Free Home-Style Turkey Meatloaf

Ingredients

  • 2 eggs, beaten
  • 1/2 cup ketchup
  • 1/2 cup bbq sauce
  • 3/4 cup gluten free crackers, finely crushed
  • 1/2 cup gluten free oatmeal
  • 1/4 cup finely chopped onion
  • 1 lb. ground turkey

Topping

  • 1/2 cup bbq sauce

Gluten Free Home-Style Turkey Meatloaf

Directions

  1. Pre-Heat oven to 350°F.
  2. In large bowl, combine all ingredients; mix well.
  3. Next shape loaf by forming it by hand on a well greased baking pan or placing it in a greased loaf pan.
  4. Bake at 350°F for 60-75 minutes or until cooked through and turkey is no longer pink.
  5. Remove meat loaf from oven. Let stand 10 minutes before serving.
