Ok, I have to admit — I truly have old favorites that my family eats over and over again — And Taco Salad is one of those meals. And with today being Cinco De Mayo — why not make this filling favorite.

I like to use ground turkey, ground beef or steak – depending on what I have one hand. I brown onions then the meat and season with Trader’s Joes Taco Seasoning.

Once the onions are limp and the meat is cooked add two cups water. Let simmer until nearly all the water has evaporated.


Wash and spin dry romaine lettuce then cut into bit size pieces. Add lettuce to a large bowl layered with tomatoes, cheese and avocados. Then add cooked meat to the salad.

Toss and serve immediately with sour cream and chips.

  • 1 lb ground turkey, beef or leftover steak
  • 1-2 tablespoons olive oil
  • 1/2 cup yellow onion, diced
  • 1-2 tablespoons Trader Joe’s Taco Seasoning Mix
  • 2-3 heads of romaine lettuce
  • 1 tomato, diced
  • 1 avocado, peeled, pitted and diced
  • 1 cup of shredded cheese
  • Sour Cream, Sriracha Sauce or Salad Dressing
  • Gluten Free Tortilla Chips

Heat olive oil in a large frying pan on medium high heat add onions and saute until onions are translucent. Add diced steak and cook until heated through.

Season with taco mix and add water and let simmer until water is nearly evaporated.

Assemble salad by adding lettuce, tomatoes, avocado and cheese topped with the cooked meat.

Toss together and serve with chips on the side. Top with Sour Cream and Sriracha Sauce or with your favorite salad dressing like Thousand Island or Ranch.
