Graham crackers are something that all adults and kids alike love. Yet, they are not that easy to find in a gluten free version at your grocery stores. And yet there are many recipes that call for Graham Crackers such as S’mores and Cheesecakes!
Nevertheless, I decided it was about time to give homemade gluten free graham crackers a whirl. And I will tell you, I’m so glad I did! They came out really great! I made mine a little on the thicker side and they were still great.
Now I am kicking myself for waiting so long to make these easy crackers.
gluten free graham crackers
- 4 cups gluten free flour
- 1 cup brown sugar
- 1 tablespoon cinnamon
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons xanthan gum
- 1 teaspoon salt
- 1 cup butter, chilled and cubed
- 1/3 cup + 1 tablespoon water
- 1/3 cup + 1 tablespoon honey
- 2 teaspoons pure vanilla extract
Preheat oven to 325 degrees. Line a large baking sheet with parchment paper. In a stand mixer with a paddle blade attached, blend all ingredients together.
Line a baking sheet with parchment paper. Place dough onto lined baking sheet. Place another piece of parchment paper on top of dough and roll out, until even thickness. Dough should reach to the edges of the pan if possible. Using a pizza cutter or large knife, score the dough into desired squares/rectangles. Prick dough with fork in an even pattern. Bake crackers for 15-20 minutes, or until edges begin to brown. Remove from oven. While still warm, carefully cut crackers along score-lines. Allow to completely before placing into a container.
