I love all things Disney. I can no longer tell you how many actual times I have been to Disneyland in the last 30 years… but I think it is around 11 or 12 times. And there are always different foods that remind you of Disneyland as well… like Dole Whips and Monte Cristo Sandwiches.
I am lucky enough to have scored the actual Disneyland Monte Cristo recipe years ago off the Disney website – I don’t make them that often because it is time consuming — but when I do, it is well worth the wait!
Today — is the first time I converted my recipe to Gluten Free and have to say, the sandwich tastes just a yummy as it did from its original recipe!
Gluten Free Monte Cristo Sandwich
Makes 4 sandwiches
1-3/4 cup + 2 Tablespoon Water
1-3/4 cup gluten free flour
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon xanthan gum
8 slices of gluten free bread ( I used Udi’s )
8 thin slices of ham
8 thin slices of turkey
8 slices of swiss cheese
3 cups vegetable oil
Jelly for dipping
Whisk the egg and water together in a large mixing bowl. Add flour, salt, baking powder and xanthan gum and whisk thoroughly until smooth. Take a rimmed cookie sheet and place a cookie cooling rack inside. Set aside.
Heat oil in a large pot to 375º F. If oil starts to smoke lower heat.
Dip sandwich into the batter, place into oil.
Repeat with the other three sandwiches.
Cook one sandwich at a time.
When ready to serve, cut in half, sprinkle with powdered sugar and serve with jelly on the side.
