Crockpot Pork Stew served over Mashed Potatoes

Yesterday was going to be my late night. My daughter joined Girl Scouts and her meetings run til 6:30 and it was easier for me to throw dinner together in the crockpot then have to make supper as soon as we got home. I am sure the husband and kids appreciated that logic — And it was COLD outside, too, so the warm stew was perfect to warm us up!

I originally was going to make a Beef Stew, but when I was looking for a package of Beef in the deep freezer, I noticed a package of the thin pork chops was punctured and decided to use that instead.

Crockpot Pork Stew served on top of Mashed Potatoes


  • 1 Tablespoons Olive Oil
  • 2 Tablespoon Butter
  • 1-1/2 pounds pork, cubed
  •  Salt And Pepper
  • 1/2 cup Onion, Diced
  • 1 Tablespoon Garlic, Minced
  • 6 ounces (one can) Tomato Paste
  • 4 cups Beef Stock Or Broth
  •  1 teaspoon Worcestershire
  • 1 teaspoon Sugar
  • 1 small bag frozen veggies
  • 3 Tablespoons cornstarch

Throw everything into the crockpot and cook on low for 8 hours. Just set it and forget it until dinner is ready! When ready to serve, spoon a good helping of the stew on top of mashed potatoes. Enjoy!
